I really can’t wait for the Fall semester to begin. I’m excited to really get started on the next chapter in my career. I’ve discovered a whole new area of restaurants and food that I have to explore and learn more about, wine. I took a great course this Spring that warmed me up for the more intense classes in culinary arts. I was really looking forward to working with the director of the wine service department, Paul, but he has accepted a lucrative position consulting. I plan on keeping up with him via facebook.
I like that life has changed so much for me in the last 6 months. I’ve been to Mexico, I am restarting a career path, I have whole group of new friends, a summer of music classes, and last but not least a wonderful fiance who I am planning a wedding with. Life could not be better.

It’s been a few years since I first sat down in a class dealing with culinary arts, 1991 in fact. The world has changed in 20 years. All it took was a look at a fewpictures on a wall to change my perspective from one of a knowledge, to one of “Man do I have a lot to learn…” I’m sure the basics are the same, that will be the easy part, the tough part is going to be learning what I’ve missed since I left the culinary world about 10 years ago. This food was beautiful. Colorful, thoughtful, and precise. During my year of culinary school I was taught how to use knives, make a few basic dishes, and how to not run a culinary college. I took that into a world where I was guided by mentors into the places where I learned the craft of cooking. Until the moment I laid eyes on those pictures I hadn’t been impressed with the idea that I was a dinosaur. I was working with knowledge that WAS 20 years old. I had to learn…
I began the process of becoming a culinary arts student before all of the above had occurred. I thought it was a good idea to get something started somewhere. I didn’t think I loved it, but it would do. I’ve since started to complete courses for the culinary arts program that are required, but not closed to only culinary arts students. Food and Wine Seminar, English 105, stuff like that. I’m meeting new instructors, making friends with people who will become the building blocks to another part of a culinary career. It’s fun, and I’ll keep you posted.
